Hearty Porcupine Meatballs (using PITP Hearty Tomato Sauce)

This is a quick easy and delicious dish which can be made to serve immediately or stashed away in your freezer until you are time poor and need dinner on the table quickly.  Serve with plenty of steamed vegetables (as pictured) or in large soup bowls with some crusty bread to the side.

Ingredients:

    • 500g extra-trim beef or pork mince
    • 1 small red onion, finely chopped
    • 1/2 cup uncooked rice
    • zest of 1 lemon, finely grated
    • 1/2 cup fresh parsley leaves, finely chopped
    • 1/2 cup carrot, grated
    •  500g bottle Hearty Tomato Sauce
    • 1 can (400g) diced tomatoes
    • 1 can water (using the empty can of diced tomatoes)
    • Sea salt, to taste
    • Cracked black pepper, to taste

Method:

1. Place the mince, onion, rice, lemon, carrot and parsley in a large bowl and mix well together.  Roll mixture into small balls (about the size of a golf ball) and then place on a try, cover and refrigerate for 10-15 minutes.

2. In a large pan, combine the sauce, tomatoes, water and seasoning and slowly bring to the boil over a medium heat.

3. Transfer the balls into a shallow baking dish (with room around each ball) then pour over the sauce mixture and bake at 180c for approximately 30 minutes or until balls are cooked in the middle.

4.  Serve with steamed vegetables (as pictured) or in large soup bowls with crusty bread.  Serves 4.
