Fresh prune plums, sugar, lemon juice, fennel seed and sea salt.
Could also be used as an accompaniment to a main course – drizzle a little over a roasted duck fillet or some freshly poached chicken. Add a few spoonfuls to some chicken stock to make a quick jus – bring to the boil then continue to cook until the mixture reduces down and becomes thicker. Alternatively use as a quick and easy appetiser by dropping a spoonful on top of a water cracker biscuit which has been spread with cream cheese or goat’s cheese. A nice accompaniment to your lunchtime ham sandwich.
