An interesting and delicious jam, lightly infused with fig leaves to gain a subtle fig flavour within the peach jam, has been made from beautiful peaches grown in a family orchard in the Riverina Southern New South Wales. Enjoy with a generous dollop spread on a piece of hot toasted sourdough or a homemade scone. See “Serving Suggestions” for plenty more ideas.*

Fresh peaches, fig leaves (for infusion only), castor sugar and lemon juice.
Using a few tablespoons of jam in a small bowl, add another tablespoon or so of boiling water, stir to make a thick sauce and fold through your home-made fruit salad to give it an interesting “gourmet” element of flavour.
